Green Papaya Thai Salad Recipe

Kim spent 8 years living in Thailand and learned some great recipes for delicious and healthy Thai food. One of my favorites is the Green Papaya salad. It’s super easy to make, fresh and healthy, looks awesome with all the colors, and tastes so good!

Ingredients for the salad
grated green papaya – It might be tricky to find an unripe papaya in the store and if you aren’t lucky enough to have a papaya tree in your backyard, you can also use unripe or almost ripe mango as a substitute and can add grated green apple.
grated carrot
chopped tomato
slivered onion
chopped cilantro
handful of peanuts toasted in a pan til slightly blackened
handful of dried tiny shrimp

Ingredients for the dressing
1 diced garlic clove
1-6 diced Thai chiles (how hot do you like it?)
3 Tbs Thai fish sauce
4 Tbs freshly squeezed lime juice
1 tsp sugar (to taste)

Directions:
Assemble the salad ingredients into a big bowl, pour the dressing over the top, then mix harshly with two wooden spoons so that the veggies get a little beat up and infused with the dressing.
Serve and enjoy!
